Mushrooms are the quintessential symbol of the autumn season and, although some cultivated varieties are available all year round, it is during this period that they appear in nature. Cooking mushrooms is really simple and requires only some care: indicatively we are talking about an ingredient that is quick to cook and perfect for making any dish. However, how to cook mushrooms is one of those questions that often hovers in our minds and, in addition to the classic side dish, we never know how to exploit its flavor. So here are our tips for cooking mushrooms correctly and some recipes for serving them.

How are mushrooms cooked?

Whether it’s the classic champignons (also known as cremini), porcini, champignons, chiodini or any of the varieties that come to mind, the first thing to remember is conservation . Storing mushrooms properly is vital not only because they tend to spoil rather quickly, but also because they could become toxic. The advice is therefore to consume them within a couple of days of purchase (or collection) or to proceed to freezing.

Then avoid washing them under running water before using them. Mushrooms by their nature tend to absorb a lot of water and you would compromise the recipe. To clean fresh mushrooms, use a brush or at most a damp cloth and rub them gently to remove the earth. The only mushrooms that can be washed are champignons, but even in this case it is better to do it rather quickly.

At this point all that remains is to proceed with the cut . Remove the end of the stem, which is often quite earthy, then gently detach the cap from the stem. Depending on the preparation, you may need it. The recipe will always tell whether to cut the mushrooms or leave them whole. As with all ingredients, keep in mind that the larger the size, the longer the cooking times will be.

Cooking mushrooms, as mentioned at the beginning, is usually quite fast . Depending on the variety used in the recipe, it ranges from 2-3 minutes for porcini to 15 minutes for Chiampignon. However, the mushroom recipes are very simple, versatile and delicious and we have selected five that may be right for you.

The recipe with mushrooms par excellence could only be risotto with mushrooms . Prepare it with fresh porcini mushrooms to experience one of the most intense flavors ever, perfect to delight the palate of the most demanding guests.

Ingredients for 4 people:

  • 340 g of carnaroli rice
  • 350 g of porcini mushrooms
  • 1/2 white onion
  • vegetable broth to taste
  • 40 g of butter
  • 120 g of grated cheese
  • fresh parsley to taste
  • Salt to taste
  • pepper as needed
  • 1 glass of white wine
  • extra virgin olive oil to taste

First clean the mushrooms by removing the earth with a cloth and scraping the stem then cut them into chunks. In a pan, fry the finely chopped onion in oil, then toast the rice and blend with the white wine. When you no longer smell alcohol, start adding boiling broth making sure that the rice is always covered flush. At this stage add the porcini mushrooms and season with salt and pepper. After about 15-20 minutes the rice is ready: all you have to do is stir in the butter and grated cheese and sprinkle with chopped parsley before serving.

If, on the other hand, you have always wondered how to prepare the mushrooms that are used for example in mushroom escalopes, there is nothing simpler. The result, on the other hand, is a really tasty second course that will be difficult to resist. Let’s see together with the recipe.

Ingredients for 4 people:

  • 600 g of chicken breast
  • 300 g of porcini mushrooms
  • 40 g of butter
  • 100 ml of dry white wine
  • 1 clove of garlic
  • aromatic herbs to taste
  • flour to taste
  • extra virgin olive oil to taste
  • Salt to taste
  • pepper as needed

First, clean the mushrooms with a cloth, removing any dirt residues. Then cut the final part of the stem and cut them into slices. Slightly flatten the chicken slices with a meat mallet, flour them and brown in a pan with the butter and a drizzle of oil, then blend with the white wine and set aside. In the same pan, cook the mushrooms with the clove of garlic and the chopped aromatic herbs for about 10 minutes. Season with salt and pepper, add the meat and continue cooking for a few more minutes before serving them hot.

There is no mushroom side dish more famous than sautéed mushrooms and it is not difficult to guess why. Not only are they quick and easy to prepare with almost any type of mushroom, but they are also perfect to accompany all main courses. Let’s find out how to prepare this recipe with mushrooms!

Ingredients for 4 people:

  • 500 g of porcini mushrooms
  • 1 clove of garlic
  • extra virgin olive oil to taste
  • Salt and Pepper To Taste
  • fresh parsley to taste
  • butter to taste

After cleaning the mushrooms by removing any earth residues, cut them into slices and cook them for 7 minutes in a pan with the oil and garlic. Finally, stir in a knob of butter, season with salt and pepper and flavor with freshly chopped parsley . Prepare this delicious side dish with your favorite mushrooms, even the champignons are excellent in their simplicity.

Simple but at the same time delicious, they are able to put everyone in agreement and if you don’t want to prepare pasta, the ready-made fresh or dry one will do just fine!

Ingredients for 4 people:

  • 2 medium eggs (120 g)
  • 200 g of flour
  • 500 g of porcini mushrooms
  • 60 g of butter
  • 1 clove of garlic
  • extra virgin olive oil to taste
  • fresh parsley to taste
  • black pepper to taste
  • Salt to taste

First, prepare the dough by working the flour with the eggs. Form a loaf and after about 30 minutes of rest, roll it out with the machine rather thinly. Obtain the tagliatelle and cook them in salted boiling water for 4 minutes. Meanwhile, prepare the mushroom sauce by cleaning them from any earth residues with a damp cloth and cutting them into chunks. Cook them in a pan with oil and a clove of garlic and season with salt and pepper. Once the pasta is ready, drain it and stir it in a pan with butter and parsley. Serve immediately.

Once you have obtained a homogeneous mixture, perfume with parsley , grated cheese and diced provola . Use a drizzle of oil to mix everything then stuff the heads of the mushrooms. Bake in the oven at 180 ° C for 15 minutes and serve hot.
