The Jerusalem artichoke, also known as sunchoke, looks like a potato, but it tastes like artichokes. It is hypocaloric and contains many vitamins and mineral salts. You can cook in many different ways, such as soups, purés and chips. Let’ see how to bake it, following some easy recipes!
Baked Jerusalem artichoke recipes
Sunchoke recipes are very similar to those with potatoes. These two tubers have a firm and thick pulp which make them perfect to bake or to cook in a pan.
The first recipe is the baked potherb sunchoke. For 4 people, you need:
– 500gr of Jerusalem artichoke;
– mixed potherbs;
– olive oil.
First of all, wash and peel the sunchoke just like you do with potatoes. Slice it and season with olive oil and the herbs you like. Mix well, then put them in a baking tray lined with baking paper. Bake your Jerusalem artichoke chips at 180° until golden.
Another tasty recipe is the potato and sunchoke pie. You need:
– 200gr of Jerusalem artichoke;
– 200gr of potatoes;
– Shortcrust pastry;
– Olive oil;
– Salt and pepper.
Wash, peel and dice both potatoes and sunchoke, then boil them in salty water. Crush both your tubers with a fork, then mix them with oil, salt, pepper and cheese. Put your shortcrust pastry in a baking tray, pour your mix and cover with breadcrumbs. Bake it at 180° for about 20 minutes.
