When aromatic herbs grow beautifully lush, we are always looking for ideas to preserve them in the best way. An alternative to the usual pesto of aromatic herbs, to preserves in oil or to freezing them in the freezer is salt with basil: very quick to prepare and perfect for those who want to experiment with particular and slightly different preparations.

How to make basil salt

  1. Take some basil leaves, clean them with a cloth and put them inside the mixer bowl. You can use them with or without stem, the choice is yours.
  2. Also add the salt and turn on the blender.
  3. Blend until you have chopped the basil.
  4. Line a baking tray or tray with a sheet of parchment paper, spread the flavored salt on top and check that no lumps have formed.
  5. Let it rest in a dry place for 12-24 hours in order to dry the basil and eliminate traces of humidity.
  6. Transfer the basil salt to a carefully sterilized airtight glass jar and store in the pantry.

Use the coarse salt with basil to taste to flavor main courses of meat, fish, vegetable side dishes or pasta sauces .

This flavored salt is best kept in a cool and dry place, always inside a glass jar with an airtight seal, for about 6 months . After this time it is better to throw it away more than anything else because the herb will have finished releasing the aromatic note that characterizes the product.
