The seitan stew with zucchini and onion is a perfect second course for the summer and is suitable not only for those who follow a vegetarian or vegan diet, but also for those who simply want something different from the usual. In this case, meat, the main ingredients of the more classic stews, is replaced by seitan, a protein product generally obtained from soft wheat gluten or other cereals.

Preparation of seitan stew stew with vegetables

  1. Peel the onion and chop it, wash the courgettes and carrot, peel and cut them into cubes.
  2. Pour the oil on the bottom of a low-sided pan, add the chopped onion, put it on the stove and let the onion soften .
  3. When the onion has become pretty transparent, add the zucchini, carrot and let it simmer with the onion, adding a glass of water if necessary.
  4. Meanwhile, cut the seitan into cubes then add the seitan to the vegetables, blend with the white wine and let the alcohol evaporate then add the soy sauce.
  5. Leave to flavor for a few minutes , season with salt according to your taste and sprinkle with chopped parsley.
  6. Serve immediately, enjoy your meal!

If you prefer, you can prepare the seitan stew with peas by replacing the zucchini with a glass of peas. Alternatively, you can prepare curry seitan .


Storage tips: you can keep the seitan prepared following this recipe, it can be stored in the refrigerator in an airtight container for a maximum of 1-2 days .
