As the name suggests, 8-glass bread is prepared using a glass as the unit of measurement , one of the classic plastic ones. Basically we could define it without dough even if, as you will see, some very simple reinforcement folds will have to be made. The result, however, is truly amazing and you will get a nice loaf to bring to the table or to use for delicious bruschetta.

How to prepare the bread recipe 8 glasses
- Combine the flour and semolina flour in a bowl, add two glasses of water and heat the third slightly. Dissolve the yeast in the latter before adding it to the bowl.
- Start kneading vigorously with a wooden spoon for a minute then add the salt and continue for another 2-3 minutes. Don’t worry if it feels too soft.
- Cover the bowl with cling film and let rise until doubled.
- Sprinkle the work surface with plenty of flour, pour the dough and fold all the edges of the same towards the center, pressing lightly.
- Gently transfer it to a baking sheet lined with parchment paper with the closure facing down and let it rise in the oven off with the light on until doubled.
- Bake in a convection oven at 250 ° C for 15 minutes by placing it on the lowest shelf, then lower the temperature to 200 ° C and continue cooking for another 30 minutes. Remember to place some ice cubes on the bottom of the oven to facilitate the formation of steam.

The 8-glass bread can be stored for 2-3 days in a plastic bag. Alternatively you can freeze it , already portioned for 2-3 months.
