How to prepare candied ginger?

You need:

– half a kilo of fresh ginger;

– half a kilo of cane sugar;

– a liter and a half of water.

First of all, wash and peel the ginger. Then, dice or slice it. Boil it for 30 minutes, until soft, drain and preserve the water in which you cooked it. You can drink it as a tea!

Put your cooked ginger in a pot with some clean water, without covering it. Then, add the sugar and let cook for 20-30 minutes, until the water has completely evaporated. Drain your ginger and let it cool down on a kitchen towel.
