Preparation of carrot cakes with thyme beans

  1. Peel the carrots, grate them finely then put a pan on the stove with a tablespoon of oil and a peeled and crushed clove of garlic. When the garlic is golden, remove it and add the carrots.
  2. Salt, pepper and add a teaspoon of turmeric.
  3. Cook them over high heat for about 10 minutes .
  4. Remove the pan from the heat and let them cool for a few minutes.
  5. Add the eggs, ricotta, grated Parmesan and a grated nutmeg, then mix everything.
  6. Preheat the oven to 180 ° C. Put a sheet of parchment paper on the bottom of a rectangular pan and arrange the carrot cream, leveling the surface until you get a layer of about 1.5 cm thick , then bake for about 30 minutes .
  7. Shell and boil the beans for 15 minutes in salted water, drain and let them cool.
  8. Let the carrots cool, then with a pastry cutter or a glass, make 8 circles .
  9. In the carrot pan, sauté the broad beans in a tablespoon of olive oil, adding the thyme, a little salt and a little pepper.
  10. Arrange a disc of carrots in the center of the plate, place a layer of broad beans on top, pressing them a little with a fork and then a second disc and more beans, this time leaving them whole.
  11. Decorate with a sprig of thyme and serve.
