How to prepare the coconut truffle recipe

  1. First, transfer the ricotta into a bowl and work it into a cream with a spatula or a wooden spoon. If you want you can also sift it to make it even smoother.
  2. Add the icing sugar , preferably sifted, and stir until it is absorbed.
  3. The last ingredient to add is coconut . Mix well until the dough is rather dry and easily workable with your hands.
  4. Now form small balls that are not too big (calculate that they will be eaten in one bite) and pass them one by one in the coconut flour .
  5. Place them on a plate as they are ready and let them rest in the refrigerator for 30 minutes before serving.

Everyone loves coconut and ricotta truffles. They are also an original idea to bring as a gift when you are guests for dinner with friends and relatives, so we advise you to write down the recipe. In addition, we recommend that you also try the truffles with oat flakes : they are special but really excellent!

Coconut truffles: delicious variations

In their simplicity, these truffles really lend themselves to many variations. Let’s see them together:

  • Coconut and mascarpone truffles: they are prepared simply by replacing the ricotta with the same amount of mascarpone. They will be creamier and “fatty” on the palate.
  • Coconut and cream truffles: the preparation is slightly different and you need to bring 250 g of cream sweetened with 100 g of icing sugar to the boil. Then add 250 g of coconut flour and continue cooking for 5 minutes. The mixture obtained should be left to rest in the freezer for 30 minutes before proceeding with the formation of the balls and their passage in the coconut flour.
  • Coconut and Nutella truffles: like the basic version we have proposed, they are obtained by mixing equal quantities of coconut flour and Nutella. In this case, however, it will not be necessary to add sugar since the hazelnut cream already has a fair amount of it.
  • Other ways to decorate coconut truffles: passing them in another coconut is undoubtedly the fastest choice but you can also opt for other ingredients. From the simplest cocoa (bitter or sweet) to dried fruit grains: any idea will go through your head will be perfect.

You can keep the coconut balls in the refrigerator for 2-3 days . But make sure you cover them well with plastic wrap as they tend to dry out.
