Preparation of the cauliflower soup

  1. Peel an onion and slice it thinly, then brown it in a saucepan with a drizzle of olive oil.
  2. Add the cauliflower cut into small pieces and the potatoes cut into small cubes, stir and cook for 2 minutes over low heat.
  3. Cover with the broth and cook until the vegetables are nice and soft .
  4. Salt and pepper, and once the consistency is the right one, blend until you have obtained a nice thick and soft cream.

If, on the other hand, you want a rustic cauliflower soup, leave it as it is, without blending it. However, we warn you: if you propose it to children they could turn up their noses at the sight of the “pieces”.
