Folpetti alla veneziana

Folpetti alla veneziana are baby octopus boiled in acidulated water and served with oil, lemon, salt and pepper and are one of the quintessential cicchetti.

The cicchetti are nothing more than the Venetian version of tapas : small aperitifs washed down with a good glass of wine and served in bacari , the typical taverns scattered around the city. Among the recipes that cannot be missed are the Venetian-style folpetti, that is, the baby octopus boiled and served with oil, salt and lemon juice. The choice falls on baby octopus not only because they are fished all year round, but also because they are small and tender, much more so than octopuses.

The cooking technique for Venetian octopus is not too complex: as for octopuses, they are immersed in boiling water to curl the tentacles and then continue cooking for half an hour. They are therefore perfect both as an appetizer and as a fast main course. If you prefer the tomato variant , then sauté them in a pan with some sauce and you will get the octopus alla Padovana.

How to prepare the recipe for Venetian folpetti

  1. First remove the spout and rinse them well under running water.
  2. Then bring a pot of water to a boil to which you have added a couple of tablespoons of vinegar .
  3. Dip the baby octopus holding them by the bag until the tentacles curl then drop them in the water and start cooking. In total it will take 30 minutes.
  4. Once ready, let them rest for 10 minutes.
  5. Serve them cut in half without cleaning the inside and season with oil, lemon, salt and pepper.

Octopus alla Veneziana are a simple appetizer and are usually served with boiled potatoes and, as mentioned, are part of the cicchetti. Also try the sardines in saor and you will feel like you are in a characteristic tavern along the canals.


You can keep the folpetti in the cooking water for a few hours before serving. Alternatively, place them in the refrigerator well covered and consume them within a day.
