From Liguria with love… Here is the onion pie!


Ligurian onion pie is a quick and easy appetizer to make, with a light outer dough and a creamy, flavorful filling.
A thin wrapper of puff pastry encloses a creamy filling with a unique flavor. The Genoese onion pie is a typical product of Italy, handed down from generation to generation. The preparation is very simple, because you just need to create a common puff pastry or brisée and stuff it with this delicious vegetable with a sweet aftertaste. The result is a savory pie that will conquer your palate at the first taste. The original recipe for this quick cake involves adding prescinsöa in the filling. It is a very creamy cheese typical of the area. If you can’t get it, however, you can replace it with robiola .

Preparation of the recipe for onion pie
- For the shortcrust pastry , pour the flour into a bowl. Add the oil and water, completing with a pinch of salt.
- Knead everything until you get an elastic mixture.
- Shape it into a block and wrap it in cling film. Let it rest for 30 minutes.
- For the filling, wash and peel the onions. Cut them into thin slices.
- Fill the bottom of a pan with a drizzle of oil.
- Add a pinch of salt and the chopped onions. Let it dry for 15 minutes , stirring occasionally.
- Afterwards, let it cool and transfer to a bowl.
- Add the robiola, grated Parmesan and 1 egg and season with salt and pepper. Jumbled up.
- Take the dough and divide it into two parts (one slightly larger than the other). Roll out the largest one with a rolling pin, to obtain a suitable sheet to cover the bottom and edges of the pan (in which you will cook the rustic pie with onions).
- Grease the mold and place this sheet on top. Pour the stuffing with onions inside.
- Roll out the other half of the dough and cover the cake with this second sheet, folding the edges to close it.
- Bake in a preheated oven at 180 ° C for 45 minutes .
