If you are looking for a light side dish to accompany your richer main courses, the lemon salad is the recipe for you.
We continue our personal battle for the enhancement of side dishes by offering you an unusual recipe that probably few people know: lemon salad. Typical, not surprisingly, of Campania and the island of Procida , it is a perfect side dish to combine with more fatty dishes such as grilled or grilled meat. Fresh and fragrant, it is perfect to be enjoyed in the summer when the lemons are full of their goodness.
Preparing the lemon salad is really simple but in order for it to be balanced in flavors it is very important to use the variety of bread lemons : they have a thin skin, a thick white part that is not at all bitter and they are not very sour. As for the dressing , on the other hand, in addition to the classic oil, vinegar and salt, you can make it even tastier by adding red onion and a pinch of cinnamon.
How to make the lemon salad recipe
- Remove the zest from the lemons with the help of a potato peeler and being careful not to touch the white part.
- Then cut them in half and finally cut them into slices.
- Transfer the lemons to a bowl and season with a pinch of salt , a drizzle of oil and one of vinegar.
- To make your salad even tastier, press the lemons lightly with the back of a spoon to release some of the juice.
There are several versions of this dish, such as the Sicilian lemon salad. In fact, the basic recipe is the same but to make it tastier, as we mentioned before, you can enrich it with some ingredients. We loved the idea of adding sliced red onion , mint and a pinch of chilli .
