Mushrooms in oil are a delicious preserve, perfect to be used for delicious recipes but also to be enjoyed as an appetizer.

Mushrooms in oil are delicious and easy to make: ideal to serve as a course during a dinner or lunch with friends. When autumn arrives, mushrooms become the absolute protagonists of our table, but if you want to enjoy them also in other seasons, this can be the best way to keep them and to have them at hand whenever you want to taste them.

In our recipe we will use the chiodini, but if you want you can also make porcini mushrooms in oil, champignons, or use mixed varieties : the recipe is the same!

How to make mushrooms in oil: the recipe

  1. First of all, the process for perfect mushrooms in oil starts with taking the mushrooms and cleaning them with a kitchen knife or a cloth , removing all the earthy parts. If you can, avoid rinsing them under water.
  2. Take a large pot and boil the water with the vinegar and salt (about a tablespoon). When it comes to a boil, put the mushrooms in and boil them for about 3-4 minutes .
  3. Once ready, drain and let them rest, preferably on a kitchen towel , so that the excess water is absorbed.
  4. At this point, after you have waited about ten minutes, put them in a bowl and season with pepper, salt, garlic (which you can chop or leave whole) and chilli to taste .

How to preserve mushrooms in oil

  1. Once our mushrooms in oil are ready, you will have to think about how to store them . Get some sterilized glass jars and fill them with the mushrooms, gradually adding the extra virgin olive oil.
  2. As you proceed in this phase, remember to press the mushrooms well with a fork , so as not to create empty spaces inside the preserves.
  3. Make sure that all mushrooms are covered entirely in the oil and, at this point, leave the jars in your pantry or somewhere dark and damp.
  4. Wait at least 2 weeks to consume them, even better 1 month . Enjoy your meal!
