Vegan spinach: the ingredients and the step-by-step recipe to prepare a natural and perfect second course for the whole family!

Today we offer you the recipe to prepare vegan spinach with a mixture of potatoes , bread and chickpea flour enriched with a spinach filling. This version without ingredients of animal origin is perfect for those who want to prepare a second healthy, tasty and different from the usual.

Storage tips: spinach prepared following this recipe can be stored in the refrigerator and in an airtight container for a maximum of 2-3 days. Here are all the steps of the preparation.

Preparation of vegan spinach

  1. First, wash the potatoes well and boil them without depriving them of the peel, separately in another pan blanch the spinach in boiling water for the time indicated on the package.
  2. Drain the cooked spinach, let them cool and after having carefully squeezed them, chop them coarsely with a knife.
  3. Once the potatoes have been cooked, drain and pass them under cold running water, peel and mash them with the appropriate tool.
  4. Season with salt and pepper and with moistened hands form small discs of approximately the same size.
  5. Stuff half of the discs with the spinach, overlap another disc on top and close to form a medallion.
  6. Prepare the batter by mixing the chickpea flour with the water.
  7. Pass the medallions first in the batter and then in the breadcrumbs, fry in hot seed oil, lift with a skimmer, dry the excess oil and serve immediately with a side of vegetables to taste. Enjoy your meal!
