Homemade vegan spinach


Vegan spinach: the ingredients and the step-by-step recipe to prepare a natural and perfect second course for the whole family!
Today we offer you the recipe to prepare vegan spinach with a mixture of potatoes , bread and chickpea flour enriched with a spinach filling. This version without ingredients of animal origin is perfect for those who want to prepare a second healthy, tasty and different from the usual.
Storage tips: spinach prepared following this recipe can be stored in the refrigerator and in an airtight container for a maximum of 2-3 days. Here are all the steps of the preparation.

Preparation of vegan spinach
- First, wash the potatoes well and boil them without depriving them of the peel, separately in another pan blanch the spinach in boiling water for the time indicated on the package.
- Drain the cooked spinach, let them cool and after having carefully squeezed them, chop them coarsely with a knife.
- Once the potatoes have been cooked, drain and pass them under cold running water, peel and mash them with the appropriate tool.
- Season with salt and pepper and with moistened hands form small discs of approximately the same size.
- Stuff half of the discs with the spinach, overlap another disc on top and close to form a medallion.
- Prepare the batter by mixing the chickpea flour with the water.
- Pass the medallions first in the batter and then in the breadcrumbs, fry in hot seed oil, lift with a skimmer, dry the excess oil and serve immediately with a side of vegetables to taste. Enjoy your meal!

Being fried we recommend consuming these veg spinach at the moment. We do not recommend freezing in the freezer.
