  2. Bring a saucepan with vinegar, water and a teaspoon of salt to a boil.
  3. As soon as the first bubbles begin to form, add the onions and cook them for 10 minutes over low heat.
  4. Drain them with a slotted spoon and put them to dry on a clean cloth for 10 hours. They should be completely dry when you go to use them.
  5. Transfer the onions into the sterilized jars .
  6. Combine aromas to taste and cover with quality extra virgin olive oil.
  7. Close with a new cap and place in the pantry for at least a month before consuming them.

Onions in oil without cooking

Preparing the onions in oil without cooking is just as simple but the times are much longer. To proceed following this recipe, put a kilo of onions in a bowl and add 1 teaspoon of coarse salt . Stir and leave to macerate for 24 hours , after which you will filter the released liquid.

Then drain them and let them air dry for another day before transferring them to sterilized jars and cover them with extra virgin olive oil.
