Of all the main courses of meat, escaped birds are one of the recipes we prefer for taste and simplicity of realization.

The escaped birds, also known by the dialect term Osèi Scapàcc , are a kind of meat skewers prepared rather than with morsels with rolls . They owe their name to the typically Brescia custom of cooking birds on a spit but, since this ingredient was not always available, “imitations” were used. This is why the birds in the recipe have … escaped!

You can prepare the escaped birds on any occasion but our advice is to consider it a Sunday dish , to be served perhaps in the classic way, that is with polenta . How to prepare the escaped birds recipe

  1. First, beat the slices of meat to make them thin . Remove any fatty parts and with a knife make small cuts (3 or 4) along the whole broth in order to prevent the meat from curling during cooking.
  2. Spread a slice of bacon on each of them (choose the type you prefer), place two sage leaves and roll up tightly.
  3. Dip the rolls in white flour and skewer them . For each person we recommend three rolls.
  4. In a pan heat oil and butter and brown the meat on both sides.
  5. Deglaze with the white wine and finally season with a pinch of salt and a pinch of pepper.
  6. Cook over medium heat for 20 minutes then serve the skewers in a pan with a side dish to taste. Our advice, as mentioned in the introduction, is to prepare a classic polenta .

When it comes to tasty seconds you will hardly find anything better than escaped birds. But you can always fall back on the simpler meat skewers : who doesn’t like them?


This meat skewer recipe should be eaten freshly made . In fact, the risk is that when stored in the refrigerator the meat dries out excessively and becomes stringy.
