Potato and kefir salad: recipe
The ingredients are:
– 500gr of potatoes;
– 100gr of milk kefir;
– 1 tablespoon of extra virgin olive oil;
– 1 tablespoon of minced parsley;
– 1 tablespoon of minced chives;
– salt and pepper to taste.
The first thing you need to do is to boil the potatoes in hot salty water for at least 30 minutes. Once ready, peel and dice them and put them in a bowl. Then, prepare the kefir sauce. Add oil, chives, parsley, salt and pepper to you milk kefir. Mix until homogeneous, then pour it on your potatoes. Mix and then store in the fridge until the following day, for your lunch box.
Potatoes are the perfect replacement for pasta and bread, because they are rich in carbohydrates, but less caloric and more filling. Instead, the kefir sauce is rich in probiotics, which benefit your intestinal flora and promote your digestion. You can also turn this recipe into a vegan one: just replace milk kefir with water one.
