We thought of preparing the orange cream to fill a dessert but when we tasted it something happened that prevented us from going further: we finished it all, one teaspoon after another ! Goodbye filled sweets then, but on the other hand we discovered that serving custard by the spoon is not a bad idea.

The secret to obtaining it so good lies not only in the use of sweet and organic oranges , but also in the presence of the juice of the same inside the cream. For the rest, in fact, the preparation is similar to that of traditional custard based on milk, egg yolks, sugar and flour . How to prepare the orange cream recipe

  1. First make sure you are using organic and untreated oranges . Wash them well, dry them and then grate the rind without affecting the white, bitter part.
  2. Then squeeze the juice in order to obtain the quantity indicated in the recipe and filter it with a fine mesh strainer.
  3. In a saucepan, mix the egg yolks , sugar , flour and orange zest with a whisk until smooth.
  4. Pour in the milk , stirring constantly, and the orange juice.
  5. Transfer to the heat and start cooking the cream, stirring occasionally to prevent it from sticking.
  6. It will take about ten minutes on low heat for the cream to take on the right consistency.
  7. Once ready, transfer it to a bowl and cover with contact film so that the patina does not form on the surface.
  8. Let it cool completely before using it.

The orange custard can be used to fill pies, cream puffs or brioches . Moreover, if you really feel lazy, you can also prepare the orange cream with the Thermomix in less than 15 minutes: success is guaranteed! As well as for the traditional custard recipe .


The orange cream can be kept in the refrigerator for 2-3 days, well covered with plastic wrap. If at the time of use it should be lumpy you can safely blend it with the immersion mixer.
