Do not worry, it is not very complicated to make the Perugian bacio chocolate cake. It starts with a sort of very rich chocolate sponge cake which is then stuffed with Nutella, cream and hazelnuts. How to prepare the Perugian kiss cake recipe

  1. First, melt the chocolate and butter in a double boiler then add the milk and mix to obtain a liquid mixture.
  2. Separately, whip the egg yolks with the sugar until they are light and fluffy, then add the chocolate cream and finally the sifted flour with baking powder.
  3. Pour into a pan lined with parchment paper with a diameter of 24 cm and bake at 180 ° C for 40 minutes , doing the toothpick test before taking it out of the oven.
  4. Let it cool and in the meantime devote yourself to the filling. Whip the cream and mix it gently with Nutella, trying not to dismantle it. Then add the chopped hazelnuts and set aside.
  5. Divide the cake into three discs of equal thickness and fill them with an even layer of cream.
  6. Melt the remaining chocolate in a bain-marie and pour it over the cake to cover it. While it is still melted, decorate with chopped hazelnuts so that they adhere well.
  7. Let the sweet Perugian kiss cool in the refrigerator for half a day before serving.

To make a Perugina kiss-shaped cake, use two different molds: one of 20 cm and one of 10. Then bake the two cakes as follows: bake the first and after 20 minutes the second. Continue cooking both for 20 minutes. Cut the two discs in half and fill them with the cream, then place the smaller one on top of the larger one. With a sharp knife give the baby the shape of a cap then cover everything with the melted dark chocolate.

  1. In the Thermomix jug, chop the chocolate 20 sec. speed 7.
  2. Then add the butter and milk and melt 3 min. 50 ° C speed 4.
  3. Once it has cooled, add flour, Nutella, yeast and egg yolks and mix everything for 2 min. speed 5.
  4. Pour into a 24 cm cake pan lined with parchment paper and bake at 180 ° C for 40 minutes.
  5. Insert the butterfly and whip the cream for 3 min. speed 4.
  6. Then add the nutella and chopped hazelnuts and mix for 1 min. speed 2 (removing the butterfly).
  7. Divide the cake into three discs and fill each with the freshly prepared cream.
  8. Melt the remaining chocolate in a bain-marie (on the fire, not in the Thermomix) and pour it over the cake. Decorate with chopped hazelnuts and leave to rest in the refrigerator for half a day.
