It is the solution when you have some potatoes at home and something good to put in it: that’s it, you will serve your potato pie with cheese and spicy spinach, without realizing it.

Preparing potato pie with cheese and fresh spinach

  1. Start by boiling the whole potatoes, previously washed carefully. You can also steam them.
  2. In the meantime, wash the fresh baby spinach leaves (those that are also eaten raw in salads) well and dry them with a salad spinner.
  3. Reduce the fontina cheese into small pieces with a knife or a carrot grater and arrange the cheese in a large bowl – where you will then add the potatoes – together with extra virgin olive oil, chilli, a pinch of salt and all the spinach. Turn well.
  4. Preheat the oven to 180 ° C, static .
  5. When the potatoes are well cooked, strain them immediately and cool them with fresh running tap water. This will make it easier to remove the peel.
  6. Cut them coarsely and purée them by mashing them with a spoon or mash them with a potato masher.
  7. Transfer the processed potatoes to the bowl with the vegetables and cheese and mix well by adding a pinch of salt.
  8. Take an ovenproof dish covered with parchment paper and distribute the mixture evenly, distribute the breadcrumbs over the entire surface, add a pinch of salt and a little extra virgin olive oil and bake for about 15 minutes .
