- To prepare the potatoes and bacon roses, start by peeling the potatoes then wash them and cut them into thin discs with the help of a mandolin. Butter the muffin tins and start shaping your roses.
- Take a slice of bacon and arrange the potato slices on top of them as soon as they overlap one another, add salt and add the chopped rosemary.
- Roll the bacon on itself, being careful not to let the potato slices come out.
- Continue in this way until you get the roses the size of your muffin pan. Place the roses inside the mold.
- Sprinkle the surface of the roses with olive oil , pepper, breadcrumbs and grated Parmesan.
- Bake in a preheated oven at 180 ° C for about 45 minutes, checking, however, that the potato rosettes do not roast too much during cooking.
- Remove from the oven and let it cool for a few minutes before serving. Enjoy your meal.
