Preparation for the recipe of radicchio, sausage and gorgonzola pasta

  1. 1. First, put a saucepan of water on the stove to boil the pasta . As soon as it reaches temperature, add salt to taste and toss the pasta.
  2. Proceed by cleaning and finely chopping the fresh onion. Take a pan and add the right amount of olive oil to dry the onion .
  3. In the meantime, take the radicchio and remove the hardest leaves on the outside and also the base (both of these parts could give an excessively bitter taste). Wash under running water to remove any possible traces of dirt.

  5. As soon as the radicchio has wilted, add the sausage and brown it until it is cooked but still juicy .
  6. At this point, prepare the gorgonzola cream . Put the cream in a saucepan and add the zola, stirring and melting everything. Season with salt and add black pepper to taste. Alternatively, you can add the gorgonzola in chunks when the dish is finished.
  7. Drain the pasta in the shallot pan and add the rest of the ingredients. Stir in parmesan or grated Parmesan cheese and sprinkle, if necessary, with a little cooking water. If you like, you can also add walnuts to give crunchiness to the dish.

If you don’t like cream, you can prepare a version of the radicchio and gorgonzola pasta without cream. Just melt the cheese with a little cooking water. Those wishing to taste a vegan version can choose to replace the cheese with tofu while, instead of the sausage, you can add other ingredients such as, for example, diced pumpkin.
