Here’s how to prepare a tasty Teroldego risotto that will delight your palate!
Risotto al Teroldego is a dish that tastes well in all seasons. The colder months, however, are ideal for capturing every nuance of the fruity scents of Trentino wine. In fact, Teroldego is a typical wine of this region characterized by floral notes reminiscent of cherry and raspberry, evoking mountain and alpine landscapes. It is recognizable by its unmistakable ruby red color. For this reason, the goodness of Teroldego rice is perceived not only with the palate, but also with sight and smell. An intoxicating and intense perfume will spread throughout the kitchen during its preparation.

Preparation of risotto with Teroldego
- Finely chop the onion and brown it in a large pot with 4 tablespoons of extra virgin olive oil .
- Add the rice making it toast well for a few minutes.
- Pour all the wine and let it absorb slowly. This step is decisive as the alcoholic part of the wine evaporates leaving room for the aromas .
- Add the broth a little at a time, stirring often and making sure that the rice is always immersed in the liquid.
- As soon as the rice is cooked, remove from the heat.
- Add a nice piece of butter and the grated Grana.
- Whisk vigorously until the ingredients are homogeneous.
- Let it rest for a few minutes and serve hot .
Risotto al Teroldego is already good this way, but if you want to create an alternative variant you can add a crumbled sausage knot during the rice toasting phase. For lovers of vegetarian cuisine, the version with radicchio would also be ideal. The latter should be cut into small pieces that are browned together with the onion .
