A natural product without preservatives: the characteristics
There are essentially three ingredients that come into play for the realization of San Daniele ham: these are selected legs of Italian pork, sea salt and – of course – the special microclimate of San Daniele del Friuli, which has always framed the whole process productive.
The result of this virtuous weave is a completely natural and preservative-free product , indicated to be included in any diet. As for macronutrients , it will be useful to underline how San Daniele ham has a mainly protein composition . It is the rapid digestibility that characterizes its proteins, of a high biological quality, since – in the maturation processes – the enzymes already carry out a pre-digestion.
On the other hand, with regard to micronutrients, it is the content of vitamins that is important: we are talking in particular of those of group B (such as B1, B2 and B3) . The latter are decisive for cellular respiration, but also for the metabolism of carbohydrates, as well as for the synthesis / demolition of fatty acids and cholesterol.

Complete the picture mineral salts such as iron, magnesium and phosphorus as well as copper and zinc (they are trace elements, which ensure – if taken even in reduced doses – a correct functioning of the whole organism). Tips for a correct conservation of flavors
A healthy and digestible product that should be tasted at its best. How can we keep the flavor of San Daniele DOP intact?
If you choose the sliced meat directly from the shop counter, you will notice that Prosciutto di San Daniele has a delicately pinkish complexion and a good covering of fat . The slices must not be superimposed on each other but separated by layers, taking care not to crush them when folding the package.
The best tasting takes place within 12 hours of purchase, with storage in the fridge between 1 and 7 degrees. The trays, on the other hand, have a maximum shelf life in the fridge – always highlighted – of 120 days. As for the whole with the bone , it must be kept in a protected environment (a cool and dry place) at a temperature between 15 and 20 degrees.
Finally a look also at the boneless and slices, for which – once the vacuum has been eliminated – the part cut on the surface must be covered with transparent film. In addition, to avoid the absorption of different odors, the whole ham (disposable paper or film) must be wrapped. The advice, before resuming with slicing, is to discard the first slice.
San Daniele DOP is an expression of flavor and craftsmanship. A healthy product to taste to feel good.
