Once, people did not throw anything away, especially left-over bread. Grandmothers handed down many tasty stale bread recipes. Inspired from these simple recipes, you can create your owns and make savory and sweet foods.

Bread pie: the recipe

Dice the stale bread and put it in a bowl. Add a glass of milk, an egg, a handful of Parmesan cheese and a pinch of salt. Mix everything with your hands until you get a homogeneous rich dough. When ready, put two-thirds of the mixture onto a non-stick frying pan with a little oil. This will be your pie base.

Stuff it how you please, for example with meat, cheese or vegetables. Add oil, oregano and herbs to taste. Cover with the remaining dough. Cook in the pan with the lid on for about 10 minutes, until it becomes golden. Cut and serve in slices when it is still warm.

Cheesy bread meatballs: the recipe

You can stuff bread meatballs as you please, for example with mozzarella cheese or with meat and vegetables. Put all the stale bread in water to soak. Then add three eggs, a little bread crumbs, parsley, parmesan, salt and pepper. Mix well until you obtain a compact dough. With your hands, shape the meatball and fill it as you please.

You can decide whether to fry or the bake them, for a lighter meal.

Sweet recipes with stale bread

Chocolate stale bread cake is delicious, soft and without eggs. Put 300 grams of stale bread in water and milk to soak it. Stir occasionally and let it sit for about half an hour. Then, add 30 grams of butter, 100 grams of sugar and 100 grams of pastry flour. Mix well and add chocolate.

Pour the mixture into a buttered baking pan and bake at 200°C for 45 minutes.

You can customize this dough as you prefer. For example, you can use soy milk, or you can use three glasses of milk and a jar of ricotta cheese.

Pastry flour can be replaced with rice flour or corn flour. Go wild!
