To prepare the mortadella mousse with a typical recipe from Emilia Romagna you need very few ingredients : high quality mortadella, parmesan, ricotta and milk. Some also add cream to make it softer but if you want to follow the original recipe, you should know that it doesn’t. You can enjoy mortadella and ricotta mousse spread on bread, with tigelle or to make delicious croutons. In all cases it will not disappoint you!

How to prepare the mortadella mousse recipe

  1. First, cut the mortadella into cubes. For this reason we advise you to have it cut into 2-3 thick slices instead of using the classic thin sliced. In any case, if you have this at home, it will be fine.
  2. Blend mortadella, ricotta, parmesan and milk in a blender until you get a soft and foamy mortadella mousse.
  3. Serve garnishing as desired with chopped pistachios.

Mousse preparation tips

As mentioned, the mortadella mousse with a traditional Bolognese recipe does not require the addition of cream . However, to get an even fluffier consistency, you can add a tablespoon maximum. For the rest, we invite you to leave the doses of the ingredients unchanged because just like in all quick and easy recipes, the perfect outcome of the recipe lies in their balance.

You can also prepare mortadella and philadelphia mousse without cream. In this case, use the same amount of spreadable cheese but increase the amount of milk by 20 ml. In fact, the consistency of this cheese would make the mortadella cream too mushy.

Try crostini with mortadella mousse or try your hand at preparing tuna mousse : both are perfect to serve as an aperitif.


You can keep this delicious mortadella mousse in the refrigerator for 2-3 days, closed in an airtight container or well covered with plastic wrap. However, we advise you to consume it at room temperature.
