How to prepare sparkling wine risotto

  1. Fry the onion in extra virgin olive oil, taking care not to let it burn but to let it dry slowly , over low heat
  2. Add the rice, toasting it in the onion .
  3. When the rice is golden, add the prosecco (or sparkling wine).
  4. Wait for the rice to drink all the alcohol, then start adding the vegetable broth a little at a time.
  5. You can see for yourself how the rice is cooking, otherwise, respect the times indicated on the package.
  6. Just before turning off the heat, add the butter and Parmesan cheese and season with salt and pepper.
  7. Stir vigorously to whisk the risotto and give it the right creaminess.

This is a dish that should be eaten hot, as soon as it is removed from the heat. Since it has a very delicate taste, you can accompany it to a second with a more robust flavor , for example a roast of red meat . The ideal accompanying wine is a white, rigorously still, not too strong.
