How to prepare sparkling wine risotto

  1. Fry the onion in extra virgin olive oil, taking care not to let it burn but to let it dry slowly , over low heat
  2. Add the rice, toasting it in the onion .
  3. When the rice is golden, add the prosecco (or sparkling wine).
  4. Wait for the rice to drink all the alcohol, then start adding the vegetable broth a little at a time.
  5. You can see for yourself how the rice is cooking, otherwise, respect the times indicated on the package.
  6. Just before turning off the heat, add the butter and Parmesan cheese and season with salt and pepper.
  7. Stir vigorously to whisk the risotto and give it the right creaminess.
  8. The sparkling wine risotto recipe is ready to be served on the table.

This is a dish that should be eaten hot, as soon as it is removed from the heat. Since it has a very delicate taste, you can accompany it to a second with a more robust flavor , for example a roast of red meat . The ideal accompanying wine is a white, rigorously still, not too strong.

The variants of the Primo Chef recipe

Like any self-respecting recipe, this too can have variations with respect to the suggested ingredients. For example, for those who do not love onion too much, we could hypothesize the use of leeks cut into very thin slices . The leek has in fact a more delicate taste but which still manages to enhance the risotto. The choice of rice could also fall on the Arborio , which keeps cooking well.

storage

Risotto with sparkling wine is a dish that should preferably be eaten as soon as it is ready . However, if there is some left over, you certainly don’t have to throw it away. You can keep it in the fridge for no more than a couple of days, then reheating it in a water bath to make it regain its original softness .
