Preparation of the recipe for pistachio crusted salmon

  1. Remove the skin from the salmon fillet with a knife and wash it under running water.
  2. Dab with absorbent paper and cut it into 2 pieces.
  3. For the breading, shell the pistachios and pour them into the bowl of a mixer.
  4. Add the breadcrumbs , Parmesan , parsley , garlic , pepper and salt . Chop everything together.
  5. Cover a low-sided baking tray with parchment paper.

Variation for pan-fried pistachio-crusted salmon

If you want to avoid using the oven, you can cook these breaded fish fillets in a pan. The method for cleaning the salmon and making this particular breading is the same. When you need to cook it, take a non-stick pan and cover the bottom with plenty of olive oil. Heat for a few seconds and then put the two slices inside, covered with the breading on each side. Cook each for a few minutes on each side, over medium heat .

The best advice is to immediately consume the salmon au gratin with pistachios. You can keep it covered with plastic wrap in the fridge for 2-3 days and heat it in the oven if necessary.
