It seems amazing how a vegan dessert can be so good and fluffy , despite being egg-free and butter-free . Those who follow this diet know it’s not that strange, but I’m sure everyone else will change their mind at the first taste of this delicious vegan coffee cake.

To prepare it, very few ingredients will be enough, but the fundamental one, the coffee, must be of the highest quality. We will then use wholemeal flour and sugar, so as to obtain a sweet that is good but healthy at the same time. In short, I’m sure you will appreciate this sweet recipe!

How to prepare the super soft coffee cake with the vegan recipe

The preparation of this cake is really very simple. All you need is a bowl and a wooden spoon , an electric whisk if you really don’t want to work too hard, and that’s it.

  1. Put the flour with the sugar and the instant coffee in a bowl. We add it to give the dessert an extra coffee connotation.
  2. Then add the milk of soy, oil and coffee. Mix well to create a smooth and homogeneous mixture, then transfer it to an oiled and floured baking sheet.
  3. For this vegan cake we used a 22 cm diameter mold , but you can also use the classic 24 cm round hinged cake. Bake at 180 ° C for 30 minutes , doing the toothpick test before taking it out of the oven.
  4. Let cool completely before serving with a sprinkling of powdered sugar .

The veg coffee cake, without eggs, butter or milk, is perfect for breakfast or a snack. It can be kept under a glass bell for 3-4 days but I guarantee you that once taken out of the oven you will hardly be able to resist that long.
