Type of salts and how to use them
Whole sea salt
It contains many minerals and oligominerals, such as potassium, magnesium, sulfur, phosphorus, copper and iodium. The presence of the latter element is the main difference between this type of salt and the normal one. For this reason, it is possible to use bigger quantities of whole sea salt. It benefits our health, for example by improving our intestine functioning. Moreover, you can use it for every type of recipe.
Himalayan pink salt
Nowadays, it is quite common. This type of salt is refined, ancient and incredibly pure. It is hand-collected on the Punjab region mountains, in Pakistan. It naturally contains 84 different elements, metals and minerals. Its crystals, colored in different shades of pink, show the high content of natural minerals, which make the Himalayan salt the richest and the most complete in the world. Moreover, it has healing properties and that is why it is widely used in beauty centers for body treatments. When you’re cooking, you can add it to every dish, especially on raw fish, baked potatoes and white meat.
Hawaii red salt
Its color comes from volcanic red clay, present in the extraction areas. It is rich in iron: 100 grams contain about 1,65mg of iron, while the common variety only contains 0,33mg. It tastes like toasted hazelnuts. Its color is its strong point, even though it loses it when cooked; nonetheless, it is perfect to decorate your dishes. It is perfect with grilled fish and meat or with tofu, rice, potatoes and risotto. Try and mash it with some herbs.
Persian blue salt
It comes from the ancient salt mines in Iran. It is very refined, therefore it is expensive. Its color is due to sylvinite. It is rich in potassium, calcium and magnesium and it has a spicy aftertaste. You can grind it or use its grains whole. it’s perfect to season vegetables, white meat, fish, salads, broth or to decorate polished dishes.
It is a sea salt, but it is smoked with oak or juniper woods, according to ancient Viking traditions. Its production, rigidly handmade, lasts very long: more than 90 hours! This kind of salt contains no additives nor anti-caking agents. It has a rich and unique flavor, perfect with meat, pasta, soups and eggs.
Brittany grey salt
It’s one of the most famous salts worldwide and has a high quality. Its greyish color comes from the minerals absorbed from a specific clay, typical of this French region. It is rich in minerals and poor of sodium. Its flavour is rich and delicate at the same time, but not too salty. Therefore, it is perfect for fish and white meat. This product is very popular among important chefs.
Cyprus black salt
This type of salt, coming from the Greek island, is enriched with vegetal coal, responsible of its black color. Its content of iodium is lower than sea salt. It is very efficient to cure intestinal diseases and poisonings. You can use it on white fish dishes, with sweet potatoes or with fruit, in order to create an interesting flavor.
It comes from England and is made of white flakes. It’s one of the most loved products among chefs. It was the first gourmet salt to be sold in Europe. Its grains are very friable; it is perfect with soft foods, for dishes where the salt must melt quickly and on sweets, especially on chocolate.
