Vegetable donut, a purely genuine side dish!


For a side dish that is as quick as it is healthy, here is the traditional recipe of the vegetable donut, cooked in a pan or in the oven.
The term ciambotta indicates a typical and very simple vegetable side dish, the recipe of which is widespread mainly in southern Italy. The preparation differs according to the region in which it is found, but the flavors at the base are the same. It is a mixture of products linked to the territory stewed in a pan, or even baked in the oven. To make it, potatoes, aubergines, courgettes, peppers, tomatoes are mainly used. Also to be served as an appetizer (if you prefer), this dish is a concentrate of excellent nutritional values and flavors linked to the Mediterranean area.

Preparation of the recipe for ciambotta in a pan
- Start by washing all the vegetables carefully. Cut the aubergines and courgettes into cubes.
- Peel the potatoes and cut them into cubes.
- Halve the peppers and clean the inside, then cut them into strips (or cubes if you prefer).
- Divide the cherry tomatoes in half.
- Take a pan and cover its bottom with olive oil and turn on medium heat. Put the onion, cut into thin wedges, and the minced garlic.
- After frying them for about 5 minutes , start adding the aubergines. Proceed with the potatoes, courgettes, peppers. Cook for 10 minutes .
- After this time, add the cherry tomatoes and the tomato pulp. Season with salt and pepper and add the basil.
- Pour in the water and mix. Close with the lid and cook for another 30 minutes . When finished, serve.
Equally delicious is the version of the ciambotta in the oven. To make it, pour all the vegetables (cleaned and cut) into a baking dish. Season with oil, salt, pepper, basil, onion, cherry tomatoes and tomato sauce. Mix everything and cook in a static oven at 180 ° C for 40 minutes .

The recipe for the vegetable ciambotta is very similar to that of the famous Sicilian caponata . You can serve it as a side dish or appetizer and, if necessary, keep it in the fridge for 3 days , closed in an airtight container.
