We prepare fojata, a typical product of Umbria


Preparing fojata with the original Umbrian recipe is really simple and the result is much more than a simple savory pie.
If you are looking for an easy recipe to bring a different savory pie to the table then you should definitely try the fojata. To the detriment of the name, it is an Umbrian recipe based on wild herbs (hence the name) and crazy pasta . It looks like a kind of loaf but it is the cut that reveals itself in all its goodness.
To prepare the cake with herbs you can opt for wild herbs or spinach , certainly easier to find if you live in the city. Also make sure you have a decent dose of pecorino or parmesan on hand to add flavor to the filling. For the rest, a little elbow grease is enough to knead and roll out the dough as thin as possible. Here is the quick recipe for fojata.

How to prepare the fojata recipe
- Place the flour in a bowl or on the work surface.
- Then add a pinch of salt , oil and water a little at a time until you get a soft and elastic dough.
- Let it rest for a couple of hours under an overturned bowl and in the meantime dedicate yourself to the filling.
- Wash the vegetables and squeeze them.
- Sauté them in a pan with a clove of garlic and a couple of tablespoons of oil until tender. When cooked, if there is any vegetation water, raise the heat and let it evaporate.
- Then chop them finely with a knife and mix with pecorino . Season with salt and set aside.
- At this point, roll out the dough as thin as possible (you will have to see through it) and distribute the vegetables.
- Roll tightly up to half, cut the dough then roll the other side.
- Divide the fojata in half and place your four loaves on a baking sheet lined with parchment paper. Alternatively, you can roll them up on themselves to form a snail
- Brush them with oil and cook at 200 ° C for 25 minutes .
- Serve them lukewarm.

We advise you to consume the fojata at the moment so as to appreciate its crunchiness . In fact, the humidity released by the vegetables could compromise it but do not despair: heat it for a few minutes in the oven and you will feel how good it is!
