To do this you will need to get a mix of gluten-free flours suitable for bread and pizza. Unfortunately, when it comes to leavened products, it is always better to avoid do-it-yourself blends because they could compromise the success of the recipe. How to prepare the recipe for gluten-free friselle
- First, dissolve the yeast in warm water.
- Then add the flour and start kneading.
- About halfway, so that it does not come into direct contact with the yeast , add the salt and oil.
- Finish kneading by hand, on a pastry board so as to obtain a homogeneous mixture.
- Cover and let rise for 2 hours .
- Then sprinkle the work surface with corn flour and lay the dough.
- Detach portions of 50 grams , work them to form a loaf and then close by pressing well as if you wanted to give the shape of a tarallo.
- Let it rise a second time in the oven that is turned off with the light on for an hour .
- Then cook the friselle in a ventilated oven at 200 ° C for 15-20 minutes .
- Let them cool then cut them in half lengthwise.
- Arrange them on the baking sheet with the cut facing up and bake for another 15 minutes at 180 ° C.
