To do this you will need to get a mix of gluten-free flours suitable for bread and pizza. Unfortunately, when it comes to leavened products, it is always better to avoid do-it-yourself blends because they could compromise the success of the recipe. How to prepare the recipe for gluten-free friselle

  1. First, dissolve the yeast in warm water.
  2. Then add the flour and start kneading.
  3. About halfway, so that it does not come into direct contact with the yeast , add the salt and oil.
  4. Finish kneading by hand, on a pastry board so as to obtain a homogeneous mixture.
  5. Cover and let rise for 2 hours .
  6. Then sprinkle the work surface with corn flour and lay the dough.
  7. Detach portions of 50 grams , work them to form a loaf and then close by pressing well as if you wanted to give the shape of a tarallo.
  8. Let it rise a second time in the oven that is turned off with the light on for an hour .
  9. Then cook the friselle in a ventilated oven at 200 ° C for 15-20 minutes .
  10. Let them cool then cut them in half lengthwise.
  11. Arrange them on the baking sheet with the cut facing up and bake for another 15 minutes at 180 ° C.
