Peanut soup recipe preparation

  1. Take a saucepan and fry the chopped onion and diced tomatoes in a drizzle of oil.
  2. Add ground ginger, garlic, parsley and chopped red pepper, and heat for ten minutes .
  3. Grind the peanuts and mix them with the mixture.
  4. Pour in a little water, and add the carrots and potatoes cut into pieces and the peas, then the broth and a pinch of salt.
  5. Close the saucepan with the lid and cook for about 15-20 minutes over low heat , stirring occasionally.
  6. Remove from the heat and serve hot with rice, chicken or just toast.
