How to prepare the mussels marinara recipe
- First, clean them carefully by following our guide on how to clean mussels if you are a beginner. The best way to proceed is to remove the barbette that comes out by grabbing it with your fingers and then scraping the shell with a steel wool. Wash them under running water and keep them aside.
- In a pan , heat the oil with the minced garlic cloves (if you don't like the taste of garlic, leave them whole so you can easily remove them).
- Add the mussels and cover with the lid.
- After a few minutes, check the molluscs, if they are opening, add the chopped fresh parsley and blend with the white wine.
- When you no longer feel the smell of alcohol rising from the pan, close the lid again and let the mussels open completely.
- Then finish with more parsley (to taste) and a grating of pepper.
- Serve the freshly made marinara mussels accompanying them with slices of toasted bread in a pan and seasoned with a drizzle of extra virgin olive oil. Don't forget the sauce that was created on the bottom of the pot, filter it to eliminate the possible presence of sand and pour it over the molluscs.
- You can also serve them with a lemon wedge if you like.
