Mimosa paste
If you are looking for a first course for Women's Day we recommend you try the mimosa pasta, simply delicious.
Already from the name it is possible to understand the peculiarity of the dish: the yellow colour. Mimosa pasta is a recipe for a quick and easy first course to bring to the table in spring but especially on the occasion of Women's Day , March 8th.
There are different variations of the dish all sharing the presence of saffron and crumbled egg yolk to give the appearance of the mimosa flower. As for the creaminess, some use ricotta, some use spreadable cheese and some use yogurt. In short, simple but also very versatile. Let's see together how to proceed.
How to prepare the mimosa pasta recipe
- First, cook the eggs so that they are hard-boiled. Place them in a saucepan, cover them with cold water and transfer to the heat. Allow 8 minutes of cooking time starting from the boil. Once ready, drain them and let them cool.
- In the meantime, finely chop the shallot (leek and onion are also fine) and brown it in a pan with a drizzle of oil until it is transparent.
- In a bowl , cream the cheese with the saffron and a pinch of salt and set aside.
- Cook the pasta in plenty of salted water for the time indicated on the package. Drain it and set aside a cup of water.
- Sauté the pasta in the pan, add the cream cheese and saffron , adjusting the consistency with some cooking water, then distribute on the plates.
- Shell the eggs, divide them in half and crumble a yolk on each plate. Serve immediately.

Our advice is to enjoy the freshly made mimosa pasta. However, if you have leftovers, you can keep it in the fridge for a couple of days, reheating it before serving.
