St. Joseph’s pancakes: perfect for Father’s Day!
St. Joseph's pancakes are one of the traditional desserts for Father's Day which occurs on March 19th: typical of central Italy, they are now widespread everywhere.
St. Joseph's pancakes, in addition to zeppole and classic cream puffs , are one of the typical desserts for Father's Day. These sweets are very simple to prepare: the base is rice boiled in milk, then enriched with flavourings.
If you don't like raisins you can easily omit them; as an alternative to the vanilla pod, you can dissolve a sachet of vanillin in milk. Here's the recipe!
Preparation of St. Joseph's pancakes
- Start by cooking the rice in water and milk , adding the scored vanilla pod. It is important to adjust the quantity of water, which must be added as the rice absorbs it, otherwise the result will be too soupy.
- Cook for 20 minutes , then remove the vanilla pod and leave to cool. Then transfer the rice into a bowl, incorporating the beaten eggs and the rest of the ingredients except the icing sugar.
- Let the mixture obtained rest for an hour.
- Place a large pan on the heat and heat the oil. When it has reached the right temperature, start frying : the measure to obtain pancakes of the right size is a spoonful of dough.
- When they are golden brown, drain the pancakes, leave them to rest on a tray lined with absorbent paper and leave to cool before sprinkling with icing sugar.
