Lemon muffins in the air fryer
Perfect for a snack, lemon muffins are very simple to prepare as well as quick thanks to the use of the air fryer.
Air fryer desserts are so beautiful. Even small quantities can be prepared because, unlike the oven, the cooking space is smaller. It also allows you to reduce cooking times, thus speeding up all operations. Today we put it to the test with lemon muffins in the air fryer.
Perfect for breakfast but especially as a snack , they are very simple to prepare. Our doses are for approximately 10-12 muffins but if you want you can halve or double them according to your needs. What is certain is the flavor: an explosion of lemon will make your taste buds jump for joy.
How to make air fryer lemon muffins recipe
- Break the eggs into a bowl, add the sugar and whip everything with an electric whisk until you obtain a frothy mixture.
- Flavor with the grated zest of the lemon, making sure to use an organic one, then squeeze the juice and add it to the dough too.
- Still with the whisk in action, add the oil first and then the flour sifted with the yeast.
- Pour the mixture into the paper cups placed in the appropriate pan (or use silicone or aluminum cups) and fill them 2/3 full.
- Cook the lemon muffins in the air fryer at 160°C for 13-15 minutes, making sure they are well cooked if pierced with a toothpick.
- Once cold, serve them, finishing with a sprinkling of icing sugar if desired.

Lemon muffins will keep for up to 5 days under a baking tray.
