Crepes with amaranth flour stuffed with chicken and avocado: too good!

Preparing amaranth crepes is really simple. The preparation of the batter , in fact, is no different from that of classic crepes, but in this case the batter is completely gluten-free. Amaranth flour and rice flour, in fact, are foods suitable for those who are celiac and cannot eat flours containing gluten and derived from wheat flour . The important thing is to choose different flours that are suitable for celiacs, checking that the absence of gluten is indicated on the packaging.

Preparation of amaranth flour crepes
- First of all, prepare the crepe batter: pour the two flours into a bowl, mix well, then add the beaten eggs, salt and milk.
- Mix by hand with a whisk so as to mix everything together without annoying lumps forming. Cover the batter with cling film and leave to rest in the fridge for 30 minutes.
- In the meantime, cut the grilled chicken breast into sticks, peel the avocado, remove the nuts and cut the pulp into thin slices.
- Take the amaranth flour-based batter, grease the bottom of a pan with oil or butter, put on the heat and pour a ladle of batter into the pan, swirl it so as to distribute it over the entire surface and cook for a minute before turn to the other side and finish cooking .
- Continue in this way until you run out of batter. Fill your crepes with salad, chicken and avocado or with other ingredients of your choice and serve, enjoy your meal !
