Poor-style courgettes with mint
Poor-style courgettes are anything but a poor side dish: their flavour, in fact, is so rich that it will surprise you.

Ideal for accompanying meat-based main courses, but also perfect for any variety of cheeses and cured meats, courgettes alla poveralla are so called because the basic ingredients to make them are easy to find and very cheap. In short, there are no excuses to prepare them, especially since they are in season right now.
Preparation of courgettes alla poora:
- To prepare your courgettes with mint, wash the courgettes and cut into thin slices.
- Place them on a baking tray and leave them to dry in the sun for a few hours: if the day doesn't allow it, just leave them in the oven at a very low temperature for the time necessary to partially dehydrate them.
- When the courgettes are ready, heat a large amount of oil in a pan and fry the courgettes for a few seconds.
- Dry them of excess oil, then add some very finely chopped garlic, season with salt and then add a couple of spoons of white wine vinegar .
- Finish with a few fresh mint leaves.
- Serve your courgettes poor-style with mint nice and hot.

storage
The courgettes made following this recipe will keep for about 1-2 days in the refrigerator . However, you should know that fried food is good as soon as it is ready, as the hours go by it will tend to become softer. We do not recommend freezing in the freezer.
