Roast turkey with tuna sauce: pure poetry!
Here are the ingredients and steps to prepare turkey with tuna sauce, a light and economical variant of the great Piedmontese classic.
Turkey with tuna sauce or tonnè is undoubtedly a reinterpretation of the classic Piedmontese dish based on veal. As in the classic preparation, in this case too the turkey breast is first cooked in broth so that it acquires flavor and then it is served cold and cut into thin slices with the addition of tuna sauce. You can serve the turkey with tuna sauce prepared following this recipe both as a second course and as an appetizer.
Before proceeding with cooking, the rump must be properly tied with roasting twine so that it maintains its shape. It will take about an hour before it is cooked but despite this it is a very quick dish to prepare.
Preparation of slices of turkey with tuna sauce
- First, cut the onion into quarters, the carrot and celery into small pieces.
- In a large pan, heat a drizzle of oil, add the vegetables and meat and brown it well on all sides. Deglaze with white wine.
- Cover with water, add the salt and bay leaf and leave to cook for 45-60 minutes . To check the degree of cooking of the meat, skewer it with a skewer: if the liquid that comes out is transparent, it is ready, if it is pink, continue cooking.
- Once ready, transfer it to a cutting board and let it cool completely.
- Prepare the tuna sauce by blending the hard-boiled eggs with the capers, anchovies and a little broth in which you cooked the meat just to adjust the consistency.
- Cut the meat into slices, arrange them on a plate and cover them with the sauce. A few hours of rest in the refrigerator will allow the flavors to blend.
There are different ways of preparing tuna sauce and the one we have proposed is certainly the most authentic. However, you can replace the boiled eggs with mayonnaise (2 tablespoons) or with Greek yogurt to obtain an even healthier and lighter dish. The same recipe can also be prepared with boiled chicken breast with vegetables.

You can store the tuna turkey breast prepared following this recipe in the refrigerator and in an airtight container for a maximum of 2-3 days.
