The combination we propose today is ideal for those who love strong flavours. Pasta with peppers and bacon is a rich and tasty first course , perfect for summer and very simple to prepare. In our version we use smoked bacon but you can also opt for the sweet one.
The recipe for this summer pasta sauce can be prepared in just a few minutes, just those needed to boil the water and cook the pasta. We will start from this point and then proceed with cooking the sauce in the pan. To complete, a sprinkling of grated parmesan and you will taste how delicious !
How to prepare the pepper and bacon pasta recipe
- First, bring the water to the boil and cook the pasta for the time indicated on the package.
- In the meantime, wash the pepper, remove the stalk, the six and the internal white filaments. Divide it into four and cut the pulp along the short side into strips maximum half a centimeter wide .
- In a pan, heat a drizzle of oil, add the garlic clove and the bacon sticks.
- After a couple of minutes, add the peppers, a pinch of salt and pepper and leave to cook for 10 minutes, just long enough for them to soften.
- Drain the pasta and toss it in the pan with the sauce, then distribute it on the plates, adding the grated cheese to taste.
If you want, you can add 4 tablespoons of tomato puree to the pepper and bacon sauce to make it redder and create a creamier sauce. Additionally, ricotta salata is a great substitute for traditional grated cheese in this recipe.

Conservation
The pepper and pancetta pasta will keep in the refrigerator for up to 3 days . We recommend reheating it in a pan before serving.
