Barbecue sauce: the recipe to prepare it at home
From America to the Italian table: here are the ingredients and recipe for the homemade barbecue sauce, ideal for seasoning meat-based main courses!
It enhances the flavor of meat , especially if grilled: barbecue sauce is a condiment of American origin (it seems to have been invented at the beginning of the twentieth century by some European colonists) which has now also caught on in Italy, especially thanks to fast food. Also known as BBQ sauce, it owes its name to the way it is used. But have you ever tried, instead of buying it, preparing it at home?
As ingredients for barbecue sauce, in addition to those easily available in your pantry (from tomato sauce, vinegar or sugar), you will need to have another sauce available, Worcestershire . Let's go straight to the kitchen and start preparing!
How to make barbecue sauce recipe
- Begin to finely chop the onion and garlic .
- Brown the two ingredients in a pan with butter (or oil), then pour in the vinegar and let it evaporate by raising the heat.
- Add the tomato puree , the concentrate and after mixing everything, also add the mustard , chilli pepper and sugar .
- Continue cooking for at least 20 minutes , then turn off the heat and let cool.
- At this point you can either filter the sauce to remove any residues of garlic or onion, or blend everything with an immersion blender to make it more homogeneous.
- Then season with salt and pepper and season everything with chilli pepper and Worcestershire sauce, putting it back on the heat for just a few minutes. Once cold, your sauce is ready to season the grilled meat.

Origin and history of barbecue sauce
Born and raised in America, barbecue is undoubtedly one of the most popular sauces, especially during the famous barbecues on the occasion of the 4th of July or particular sporting events. However, what not everyone knows is that despite being made in the USA, it was most likely the European colonists who prepared it for the first time between the 19th and 20th centuries.
The first written traces of the recipe date back to 1900 and are contained in a handwritten text found in the Johnson&Wales College of Culinary Arts bookshop in Providence. We have to wait a few years to arrive at a standardization of the sauce carried out by none other than Mr. Heinz , the same one who codified the ketchup recipe. We are in 1948 .
Like more native preparations, American barbecue sauce also varies based on areas and tastes. There are those who prefer it spicier, those who prepare it using ketchup instead of tomato sauce (as in the more traditional recipe) and those who flavor it with whiskey.
