Vegan dumplings

From Südtirol and directly to your table in the blink of an eye: vegan dumplings can also be prepared at home.

They are served as an appetizer or as a first course, in some cases even as a dessert: we are talking about dumplings which we are revisiting today in a vegan way . This simple dish encompasses part of German, Austrian and Czech cuisine.

Of peasant origin, it was born from the need to use the ingredients available to bring something appetizing to the table. We opted for delicious vegan dumplings, prepared without the use of products of animal origin . The challenge we propose is to make vegan and Tyrolean dumplings with spinach in broth.

How to prepare the recipe for vegan dumplings in broth

  1. Cut the bread crumbs into cubes and place them in a bowl then pour in the warm soy milk . Make sure it is without added sugar.
  2. In the meantime, blanch the spinach in salted water for 2 minutes.
  3. In a pan, heat the oil and brown the finely chopped onion . Add the spinach and sauté for a few minutes, adding salt if necessary. Once ready, chop them finely with a knife and add them to the bread.
  4. Mix well with your hands, flavoring with pepper and nutmeg . Then add the flour and, if needed, some breadcrumbs to dry the mixture slightly. You should be able to form 5cm dumplings that are moist but not sticky. As they are ready, place them on a cutting board.
  5. Heat the vegetable broth in a pan and add the vegan dumplings. They are ready when they float to the surface ( about 15 minutes ).
  6. Plate and decorate each dish with fresh chopped chives.

We leave you a video with all the steps to make the recipe. As you can see, spinach can also be replaced with other ingredients such as radicchio or herbs.

If, however, you would like to eat dry vegan dumplings, instead of preparing the broth, bring the water to the boil, cook them for about ten minutes , drain them and season them with melted vegetable butter, always adding a pinch of chives.

Conservation

Once prepared, egg-free dumplings can be stored in the refrigerator for about 2-3 days , closed in an airtight container. If you don't plan on eating them within this short time, you can freeze them before cooking.
