Cauliflower and potato pie

Ingredients and recipe for potato and cauliflower pie: a rustic side dish, easy to prepare and excellent to pair with meat main courses!

If you are looking for a different idea to bring cauliflower to the table and tone down its flavour, the cauliflower and potato pie is the right recipe for you. You can make them in a single portion version or by cooking everything in a baking dish, the important thing is that a crust forms on the surface.

To prepare it, very few ingredients will be needed: in addition to cauliflower and potatoes, eggs, parmesan, breadcrumbs and chives. Once the vegetables have been boiled , they must be crushed and mixed with the other ingredients in order to obtain a sort of cauliflower pie which can then be cooked in the oven. But let's see all the steps together.

How to prepare the potato and cauliflower pie recipe

  1. First, take the cauliflower , remove all the florets and rinse them.
  2. Peel the potatoes , wash them well and cut them into cubes. Transfer the cauliflower tops and potatoes into a large pot, cover with water, salt and place on the heat. Cook until the cauliflower and potatoes are well cooked. It will take about 15 minutes .
  3. Once cooked, turn off the heat, drain the potatoes and cabbage and let them cool before transferring them to a bowl. Mash the potatoes and cauliflower using a fork then add the parmesan , eggs , salt and pepper . Mix well, add salt if necessary and finally add a little chopped chives.
  4. Butter some muffin cups and sprinkle them inside with a little breadcrumbs. Fill the baking cups with the cauliflower and potato mixture and bake in a preheated oven at 190°C for 20-25 minutes.
  5. Once cooked, remove from the oven and leave to rest for about ten minutes before turning your cakes onto a serving plate.

As mentioned, you can also make a single pie using a baking dish suitable for cooking in the oven. In this case the cooking times will be slightly longer: at 190°C it will take 40 minutes . Conservation

The cauliflower pie will keep in the refrigerator for 2-3 days. Reheat it in the oven or air fryer before serving it.
