Pumpkin and leek flan

Pumpkin and leek flans are egg-free and vegan vegetable pies: here's how to cook them in the oven, with the Thermomix and in the microwave!

If you are looking for a tasty appetizer, then our pumpkin and leek flans are just right for you. In this recipe we will make single-portion light vegetable flans using pumpkin and leeks in a 100% vegan version without eggs, cheese and dairy products.

But there's more! Yes, because in addition to traditional oven cooking, we will also see how to prepare these pumpkin pies with two alternative cooking methods , namely with the Thermomix and in the microwave. Let's see the recipe for pumpkin and leek pie right away!

Ingredients

For the flans

  • Clean Delica pumpkin – 450 g
  • Leeks – 150 g
  • Soy milk without added sugar – 100 ml
  • Breadcrumbs – to taste
  • Extra virgin olive oil – 2 tablespoons
  • Fine salt – to taste
  • Pepper – to taste

Preparation

How to prepare the pumpkin and leek flan recipe

First, clean the pumpkin by removing the peel and seeds, then cut it into pieces of about one centimeter. Also clean the leek by removing the dark green part, the outer layer and the roots. Wash it under running water and cut it into rather fine slices.

Heat the oil in a pan and brown the leeks for a few minutes, immediately adding a pinch of salt. Then add the pumpkin, season and pour in half a glass of water . Cover and cook until tender. Season with salt and pepper during cooking.

Transfer the vegetables into the bowl of the immersion blender, add the soy milk and blend until you obtain a smooth cream.

Grease the molds with a drizzle of oil and then add some breadcrumbs. Pour the mixture filling them 2/3 full and cook in a preheated oven at 180°C for about 20 minutes . Serve hot by turning it out directly onto the plate.

Thermomix pumpkin flan

If you want to prepare these pumpkin pies with the Thermomix, here's how to do it!

  1. Place pumpkin and leeks in the bowl and chop quickly. 5 for a few seconds.
  2. Add oil, salt, pepper and aromatic herbs and cook for about ten minutes at speed 2, temperature 100 °C.
  3. At this point, add the vegetable milk and let it go for a few more seconds.
  4. Grease the molds and pour the contents inside them, a little breadcrumbs and off you go in the oven!
  5. Cook at 180°C for 20 minutes.

Pumpkin flan in the microwave

You understood correctly, it is also possible to prepare flans in the microwave! If you are in a hurry and want to cook your vegan soufflés in a practical and quick way, or you are preparing an important dinner and your oven is already busy for a delicious second course , this could prove to be an excellent solution!

  1. What you have to do is simply cook all the ingredients (with the Thermomix or without) and then fill silicone molds with the mixture you have obtained.
  2. Cook for about 5/6 minutes at a temperature of 800W and this quick appetizer is already ready. Enjoy your meal!

Conservation

The simple and tasty flan made following this vegan recipe can be stored in the refrigerator for a maximum of 2-3 days and inside a special food container with an airtight lid. If you used all fresh ingredients you can also freeze it in the freezer.
