The Cripsy McBacon sauce is no longer a secret: McDonald's decides to reveal it to the world. So here's how it's done!

The company entrusted Roberto Valbuzzi with the task of interpreting the Crispy McBacon sauce recipe. If you have always dreamed of creating at home the delicious sauce that characterizes one of the most loved sandwiches in Italy, here's how to do it. The recipe, among other things, is Italian : it was created by the historic fast-food brand Burghy , later acquired by McDonald's, and originally marketed under the name King Bacon.

The Crispy is a sandwich that sells around 50 thousand pieces a day in Italy: a real star. However, what makes it so delicious and succulent is not just the meat, or the crispy bacon or even the slices of cheddar. The secret is all in the crispy sauce and from today you can make it at home!

Preparation

How to prepare Crispy sauce with the original recipe

The starting point is mayonnaise. Combine the egg yolks , vinegar , mustard and smoked salt in the bowl of the immersion blender. If you don't have it, you can replace it with the same weight of fine salt and add 1 teaspoon of smoked paprika or 4-5 drops of liquid smoke in the next step.

Start blending and slowly pour in the oil , whipping the mixture. You should obtain a smooth and thick sauce. Alternatively you can use 250 g of ready-made mayonnaise and follow the recipe from the next step.

Add the gherkins , capers , tomato paste , garlic powder , the stock cube (preferably granular, otherwise crumble it well with your hands) and, if necessary, also the smoky note of paprika or liquid smoke. Blend again until you obtain a smooth cream: your crispy sauce is ready!

To recreate the magic of the classic sandwich , grill two quality beef burgers, then melt the same number of slices of cheddar, fry the bacon so that it becomes crunchy and place everything between two slices of toasted bread. Obviously complete with the sauce in generous quantities.

Conservation

The crispy sauce will keep in the refrigerator in an airtight container for up to a week.
