How to prepare artichokes scented with orange, bay leaves and juniper berries

To begin with, let's see how to clean artichokes . Take a bowl and fill it with water and lemon juice, which you will need to prevent the artichokes from oxidizing once cleaned. Remove the external and excessively hard leaves, the tips of the remaining ones and the internal beard, then also remove the final part of the stem. As you proceed, place the cleaned artichokes into the bowl with water and lemon .

Let's now see how to cook artichokes in a pan. Heat a clove of poached garlic in a non-stick pan with two tablespoons of extra virgin olive oil and, once hot, place the artichokes cut in half in the pan, cooking them over a moderate heat and seasoning with salt and pepper . Add the bay leaves and juniper berries , continuing to check the cooking of the vegetables.

When they are cooked, raise the heat and pour two tablespoons of orange juice into the pan. Blend well, allowing excess liquids to evaporate, and once done, serve the artichokes while still hot with a drizzle of raw extra virgin olive oil .
