Lust tagliatelle for Valentine's Day have a double advantage: first of all, they are quick to prepare and therefore will not force you to spend the evening in the kitchen. Second, they are aphrodisiacs: that's why we called them the noodles of lust.

For the tagliatelle
- Eggs – 2
- Flour 00 – 200 g
For the seasoning
- Fresh salmon – 200 g
- Fresh cream – 150 ml
- Dried chili pepper – 1/2 tsp
- Extra virgin olive oil – 1 tablespoon
- Fine salt – to taste
- Pepper – to taste

To prepare your tagliatelle of lust for Valentine's Day, start with the tagliatelle (if you decide to prepare them yourself). Place the flour in a mound in a bowl or, if you are handy, directly on the pastry board. Break the eggs in the center and start kneading, incorporating the flour with a fork, little by little. Knead for about 10 minutes, then leave to rest for half an hour , covering the dough with cling film or with the bowl turned upside down.
Roll out the dough thinly, obtaining a very thin, almost transparent sheet. You can use either the rolling pin or the granny duck. Fold it on itself and cut it to form tagliatelle which you will then unroll immediately.
Let's move on to the sauce: take a salmon fillet and cook it in a pan with a drizzle of extra virgin olive oil , then when it's nice and crunchy on the outside, cut it into small pieces.
At this point, heat some cream in a pan and season with a pinch of salt and pepper . Let the sauce reduce and then turn off the heat.
Boil the tagliatelle in salted water for 2 minutes and, when they are cooked, drain them in the pan with the cream. Stir and add the chilli and chopped salmon .
Tagliatelle della libidine are a variation of the more classic salmon tagliatelle . Since this is an ideal dish for a romantic dinner, we have given you doses for 2 people . However, no one is stopping you from doubling them and thus obtaining a dish for the whole family. Furthermore, if you don't want to prepare homemade pasta, you can use 200 g of dried tagliatelle (usually 2 nests per person) or 250 g of fresh ones from the refrigerated counter.
