Marinated egg

The marinated yolk is one of the many recipes with eggs developed by Carlo Cracco. Here's how to prepare it in a few steps.
When we talk about marinated egg we are actually referring to the marinated yolk made famous in 2002 by chef Carlo Cracco . Unlike other typical haute cuisine preparations, this one immediately aroused the interest of us mere mortals due to its simplicity of creation .
In fact, for the marinated yolk you only need 3 ingredients which you will surely already have in your pantry: eggs, salt and sugar . We would like to point out that in its first variant the yolk was marinated only with salt but the result was too extreme. The addition of sugar allows you to obtain a perfectly balanced flavour. Furthermore, depending on the marinating time , it is possible to obtain different preparations (and therefore uses). Let's see everything in detail.

Ingredients
For the marinated egg
- Egg yolks – 4
- Granulated sugar – 250 g
- Fine salt – 250 g
Preparation

Start by mixing the salt and sugar in a bowl.
Pour half of it into a flat-bottomed container that is not too large. You will have to get a fairly thick layer.
With the back of a spoon, make two indentations : they will be used to accommodate the egg yolks.
Get fresh eggs, preferably organic. Gently separate the egg white from the yolk which must be perfectly intact.
Place them in the recesses and cover with the rest of the salt and sugar mixture. Leave to marinate at room temperature in a humidity-free place for the time necessary to obtain the desired preparation.
We opted for chicken bottarga , a completely hardened yolk perfect for grating on pasta. In this case it had to rest for 14 days in a semi-closed container. Before using it we rinsed it quickly under running water.

If you leave the yolk to marinate for just 4 hours it will be slightly hard on the outside and creamy on the inside, making it perfect for garnishing salads or avocado toast . After 10 hours the consistency will be rather rubbery while with the 14 days of marination you will obtain an amazing product that will make a great impression on your guests.
Why is Cracco's marinated egg umami?
During marination, the yolk loses water and concentrates its flavors , developing a savory and intense note similar to parmesan or soy sauce. That's why it's often used grated on pasta and risottos to add depth to the dish. It's about umami , that flavor that we have learned about in Japanese cuisine that can make your mouth water.
Conservation
The yolk marinated for 14 days can be stored in the refrigerator in an airtight container for a week . In the other variants it must be prepared and enjoyed at the moment.
